We played late into the evenings, watching the sun set. We skitted about around the water park and visited family hundreds of miles away. And we frolicked through the sand on the beaches of Florida. We have officially made the most of our summer.
But then I realized that I had let the summer pass without making one single pasta salad. So on the last week of summer vacation, I fixed that.
This recipe is my mom’s. I’m not sure where she got it, but I remember her making it and loving every last bite. What can I say? I love my carbs. It’s always a hit and perfect for those lazy summer evenings. It’s a really easy pasta salad that you can throw anything you like into it. The more the merrier, right?
- 1 box of Pasta (any shape)
- 1/2 cup Carrots
- 1 Bell pepper
- 1 cup Ham (cubed)
- 1/4 Pepperoni
- 1 tablespoon Mayo or Miracle Whip
- 1/2 cup Italian Dressing
- Grape tomatoes
- 1/2 cup cheddar cheese
Boil your pasta in salted water Meanwhile, chop up your bell pepper, grape tomatoes (and any thing else you’d like to add. Broccoli is great in this, btw) Next, add your dressing to a bowl and one tablespoon of mayo or miracle whip (for creaminess). Whisk together until well mixed. Throw your carrots into your boiling pasta water for a few minutes to soften them up. You don’t want them mushy, but you also don’t want them rock hard. Drain your pasta (and carrots) and add it to your bowl. Add ham, pepperoni, cheddar cheese and chopped veggies to the bowl and mix well.
